Good point about trying store bought to help develop the home made stuff..
Ive been making rubs and putting them on a piece of mince beef/pork and frying so I can taste the cooked flavour. Seems to work well. I know after a few hours of smoking the flavour will be different again but it gives a good idea of the out come
