Sorry if this sounds ignorant but how do you use a computer being blind? Best thing I can docfor you tiny is eat it and put in words how it is.

Good point about trying store bought to help develop the home made stuff..

Ive been making rubs and putting them on a piece of mince beef/pork and frying so I can taste the cooked flavour. Seems to work well. I know after a few hours of smoking the flavour will be different again but it gives a good idea of the out come

Hi Ben,
Never mind folk asking, I have a screen reader program that reads what is on the screen, and I move about using key strokes rather than a mouse, so alt + a opens the facourites menu in internet explorer, b 3 times cycles through the 3 b related favourites I have bbc I player, bacon basics and then hurrah its bbbqs!

Its like everything you find ways to work around, I spent the day today in the back garden in the shade, I switched between a talking book and listening to the cricket.

Tomorrow I proudly pull on my Hampshire Shirt as I captain the blind cricket side against Warwickshire in the national league and Sunday it is more cricket as we are doing a demo at the rose bowl.

My leftover pp will be waiting for me after the event though, 7 hours today with piggys shoulder and that well known duo apple and mesquite have made me a very happy man, in your honour I raise a chilled cider to go with!

Ahhh brillint. I have a disabled son with cerebral palsy, I too dont mind answering peoples questions about it. Ben (my son) hes really good with it and tells peoeple Bout it. Hats off to you not letting being blind stop you doing what ever you want.

Right now I am drinking cider, just had a chinese and got eastenders on. A great English friday night.

I have just bought a leg of lamb for the smoker tomorrow and it has just dawned on me I dont know what to rub on it.. should I cook it bone in?

I need help people.

I always cook mine bone in.then i stud the lamb with slivers of garlic and sprigs of rosemary,some black pepper and sea salt(wife hates spices). takes at least 5 hours,for me anyway, at about 230f.

I Googled dry rubs and came across the Kansas city dry rub which I really liked but the wife found it to spicy.

I have tweaked it a bit and usually use smaller amounts of everything, I've just swopped 10g's of salt and 10g's of garlic powder for 15g's of Johnnys seasoned salt and 5g's of garlic powder.
I make the same rub every time now and also use it on diced chicken when we have fajitas instead of buying the kits we just buy the wraps now. We really like it on chicken but I have a cup of water with me when frying the meat as it starts to stick. The water just keeps it off the pan. I don't use oil as i think it spoils the rub
I like a lot of rub on my pork shoulders and ribs and so far good comments. I did a some ribs with no rub on and just sauce at the end and they all got eaten.

Everybody's taste is different so whatever works for you :D

I started off by reading the countless books i have containing rubs and sauces to get a good understanding of what to use and what not to. I have tried many rubs exactly as they were written, some were to my taste and some were awful (in my opinion), I guess its subjective. I now blend all my rubs myself and have a few key ones that i tend to stick with, I occasionally tweak and alter them to experiment and record how they worked out. I'm always up for trying new ones though, never say no till i've tried one! tend to get my spices from http://www.thespiceshop.co.uk/catalog.php they are pretty good and quite reasonable in price.

Here is one of my favorite rubs, product of quite a few experiments to blend this one, which I use all the time for pork (pulled and ribs) it has its roots in a Carolina style rub

57g muscavado sugar
1/4 cup of white granulated
4 tablespoons of maldon salt
1 tablespoon of garlic powder
1 t-spoon of white pepper
1 t-spoon of black pepper
31g spanish paprika
8 g dry chipotle, chopped finely and ground as best i can
2 t-spoons of cayenne
10 allspice berries ground
1 tablespoon of cumin

Let me know if anyone tries it and what you think, be honest!
