Saw them using this cool knife - an Old Hickory butchers knife. Made of carbon steel, and cheap as chips (we pay a premium in the UK, but still cheap as chips). It is the ideal outdoor cooking knife, tough as nails, can use it to chop wood, or slice tomatoes. Hardwood handle and you can sharpen it on a flat stone
Being carbon steel, it will rust - so you have to take care when washing - but that doesn't bother me at all.
