There are mixed views on injecting I've done it with beef and shoulder of pork and it has always been moist and well flavoured. Years ago I started injecting chicken breasts both on and off the bone and you can add nuances of flavour. Give it a go and see what you think people get great results ...

Chuckie try searching for UDS on here or PM'ing Cyderpig (Simon Dyer) and I believe Strechie posted a good guide to UDS heaven. Also loads on the web about building one.

Well put as always Tiny I would serve homemade( or good quality shop bought) slaw with a slice of dill pickle. Have to agree with the Mac & Cheese comments it has no place as a side it is a menu item in its own right. Love an onion loaf and far easier than an onion flower. All the above are my ...
