I'm planning a cook tomorrow on my new Pro-Q Elite, when hopefully it's not raining quite as hard!
I asked the butcher for 6 beef short ribs, and this is what's been delivered. My question is, what has been included? There seems an awful lot of meat on top compared to what I expected. Is the layer on top the brisket?
The ribs at the bottom don't seem to have much on them at all, any advice on what to do with this cut?
I've got time to dry-marinade overnight for tomorrow.
