Small Pork Shoulder

Postby Ivycledus » 24 Sep 2014, 17:46

Looking at smoking a small pork shoulder for 4 people. What is the best cut to ask for. I think neck end but only a small one? I have heard some cuts can come out dry?

Thanks.

Neck end will be fine, obviously the smaller it is the greater the risk of it drying out, pulled pork makes great left overs for things like nachos, chilli and fajitas so don't worry too much about cooking more than you need. Personally I never cook less than 2kg, this will leave you with something around 1.0 to 1.5kg of cooked meat, enough for 4 with left overs.
