I have recently been trying various recipes out for baked beans with varied success but tried a different route and tested out a Tom Kerridge recipe that featured in his TV show. Unlike most recipes I had seen this was thoroughly British and also called for the use of dried beans, they were good but made them a second time with a few tweeks and added some of my bbq sauce and they amazing. I followed the method until the last cooking stage and then cooked them for about 6 hours under a whole 10KG pork shoulder, cooking temp was 225f and was using the water tray in my smoker so was high humidity and the beans did not thicken a great deal. I decided to then put them in the oven for a little, while the pork was resting just to thicken them up slightly. I cooked this for a big family party and they went down really well and received rave reviews, I have posted the link below.
