I got a bone in neck end cut complete with a few ribs and a bit of spine, thankfully it was done in 10 hours! I think it was in the region of 3.5kg

18 hours for a medium-sized brisket at avg. temp of 210F! Turned out perfect

Some of these times are quite staggering.

I can't for one moment imagine the wife getting up at 0200hrs to start the sunday roast. For me though, I see it as a sort of mini adventure...'0200hrs no problem' :lol:
