Indirect from the side or the centre!

Hello !

So - looks like its going to be ideal BBQ weather this weekend! I'm going to get to christen my new 5-burner gas grill but one question I have that I hope the more experienced will be able to answer.

For indirect cooking, would I be best with L & R side burners on and cooking the meat in the centre of the grill or lighting one side only and cooking on the opposite side? I have seen both types of setup used but not sure that on such a large grill that one won't be better than the other.

Thoughts please!

IMHO I'd place the meat in the centre with the outside burners on low, that would give a more even cook than having to turn it halfway through cooking.

Thanks Keith. That begs my next question then - should I get a smoke box for both sides or just stick with the one!?

Hello chap, am abroad in your fair city this weekend, I am with the above but with the caviat depends how warm it gets with 2 burners on low, if you can keep it around 110c then this is perfect. Would live with an single smoke box, but if was using the simple foil pouch would put one either side to ensure the feng schway was balanced..........

I would invite you to eat Tiny but not sure you'd want to share your smoked ribs with 15 teenage girls (daughters birthday!)

Sounds dreadful, hide in the shed. Similarly guessing you might struggle to sort out the 60+ partially sighted and blind tenpin bowlers I will be hanging with not to mention mine and the other guide dogs!

Have a great cook, and remember beer makes things better :)
