Booker ribs

Postby MikeMackie » 23 Nov 2013, 18:44

Hi I've managed to blag an account at bookers.

I picked up two boxes of frozen ribs but they are frozen together.

Any tips on separating the frozen racks? :?

defrost them all, cook them all and then slide into a cozy meat coma.

Which ones did you get? They usually have a bit of plastic between the layers, but you still need to partially defrost to pry them apart. You can then re-freeze.

I got a white box with 202 and Chinese writing on for 23 quid and a white box with half a pig on for 21 quid.

I'll have a better look in the morning for the blue film.

The one with 202 are the "German" ribs. I use those and they are nice. Not a patch on fresh, but fine eating.

There will be plastic officially between the ribs, but often it slips out and they clump together. The best way to separate them is with a good strong butchers steel having allowed them to soften SLIGHTLY. I had a clump of 3 which refused to separate till almost defrosted so they went into the fridge and we had ribs the next day. They are well sized for large vac-bags and worth individually freezing vac-packed if possible.

Hiya mate, the loin ribs ( baby backs) in the green box with dragon and Chinese writing on the front are individually wrapped, but they are about £33 a box now.
