If you stick a metal skewer through a potato it radiates the heat through into the middle for a faster more even cook.

Do you think it would work the same if you have a skewer in or just a leave in thermometer?

Just seen this, the heat transfer is why I always try and cook bone in

So it should hopefully work if you just wanted to do a small joint that had no bone. Im going to try it out this weekend one with a skewer one with out. Tastey experiments is what I like
