Hello from sunny Halifax!
I’ve just bought a Slow ‘n Sear for my Weber kettle and have spent the last two days studying, obsessively, how to smoke brisket.
I’m a primary teacher so I’m aiming to get one cook done before we head back to school on Monday. Today, I have ended up making two runs when I probably should have been planning.

Hi Bobsy,
It went surprisingly well!
The Slow N Sear looked after itself for the most part and I was able to go back to bed after a 6am start
I smoked a pork shoulder for around 12 hours but had to cut the cook off just a little earlier than I wanted to as the stall lasted much longer than I expected. I ended up with a killer bark but I think I will wrap it once the stall starts next time.
I’ve spent this week getting used to the KettlePizza. Might as well just get rid of the kitchen stove!!

the bbq bug and now I'm days away from trying my first long brisket ve just bought a Slow
