Hello from Northumberland
Just thought I'd say hi, I've been BBQ'ing for a while now with gas but decided to get an off-set smoker to try proper low and slow
. It's only a cheapie but will set it up next weekend for fathers day and give it a go. If all goes well I'll persuade the "decision maker"
to let me spend a little more on something more substantial!

It didn't go too bad at all............ribs were not quite falling apart but at the time I was only going off temps on the nasty lid thermometer, so probably at the rack the temps were a little low - got a maverick type thermometer on order now. Also will try to make a more permanent baffle between the firebox and the smoker to distribute the heat a little better.
Hopefully a little bit better next time!
