Hey Guys.
I'm Matt, I have been grilling for about a year the correct way. I live in Greenhithe in Kent. South east england.
I have a offset smoker that i purchased from the range last year as a start off. Will buy a bigger/better when i get better.
At the moment i have successfully cooked:
Pork shoulder,
Baby back ribs,
Chicken Lollypops.
Last weekend i attempted Brisket and failed. Tasted very bitter i struggle with keeping temp up as i fell asleep. Was an all nighter cook and i didnt make it.
End of the month i will attempt brisket again with maybe some pork shoulder and ribs.
I will upload some pictures once i get round to figuring it out.

Welcome to the forum, the trick with brisket is actually not purring any effort in! the bitter taste would be due to too much smoke. what setup do you have and what fuel were you using?
