Just found the forum and am completing the build of my first UDS. Anyone got any tips for my first attempt at some low and slow this weekend if this unusual weather keeps up here in Scotland. Advice ref amounts of coal etc also appreciated. Thanks in advance for any insight into the dark arts of smoking [FACE WITH STUCK-OUT TONGUE AND WINKING EYE]

Hi Alastair and welcome, I'm not too sure about UDS's but there's plenty who do, and have wrutten some really good posts. I'd try searching until someone comes along. Have fun.

Hi and Welcome
Try some chicken thighs for a 1st attempt they don't cost much and should give you a good feel for the way a UD cooks.
Build your fire using the Minion method, two of three chunks of wood and you should be ready to rock and roll.
Thighs take between 1.5 to 2ish hours depending on UD temp, most of all enjoy.
Cheers
