Hi everyone,
To introduce myself, I have recently moved to Edinburgh and started a family with my wife.
Having once spent a happy year barbecuing in Australia ( kangaroo was great!), and last year gas barbecuing through the winter when my wife was based in Northumberland, I really wanted to try charcoal barbecuing and slow cooking.
Reading this forum has been a real help. I was looking at getting a WSM, but considering scottish winter weather decided a kamado joe would be best because of the much better insulation. Just waiting on delivery of a used one, and have bought some lump charcoal and one bag of oak lump. A member here is selling a used heatermeter, so as long as I can get a fan adapter for the kamado was going to get that too - almost all set!
My wife is a real foodie so once I have learned the basics, I will need to start looking at the more complicated ways of marinating, using herbs and wood smoking, or cooking fish on planks.
Again, very helpful to have this resource for learning!

Thanks! So far the delivery van has broken down and I'm still a little unclear about the heater meter I am planning to buy here, but hopefully this is the week!
