Hi everyone,
I've been looking for a butchers near me in East Yorkshire for meat, and I've found that trotters place in Scarborough great for pork, however not found anyone that supplies beef yet and I'm wanting to try a brisket on the WSM this summer, has any come across anywhere?

I think it's good to support local butchers, so rather than looking for a big supplier, find the nearest, say, five butchers to you, and call them to ask "Are you able to order in a full brisket, so I can choose a large cut from it with a fat cap on?"
That way you can choose how big a cut you get, and which part - often the rolled brisket joints contain a lot of plate, whereas you want the other end, with the point, and a decent covering of fat. And bones to make stock if you want.
Butchers sometimes don't display everything they sell, so you have to ask around for what you want. If you have a butcher that can readily do you custom cuts, you're a winner.

Rob, as often, is right. I found a good butcher (after searching around for a while and getting ripped off a few times on the way) and had a chat with them to explain what I wanted.
Easy to start with pork shoulders as everyone does these (but some will leave the spine in and charge you for it), then asked about ribs and even recently I have picked up 10 rib meaty baby backs and he has started cutting my spares St. Louis style - again so I am paying for what I want and not left with a load of trimmings.
At Easter I am going to be branching out to brisket and a lump of chuck steak (as well as the compulsory piece of lamb) an we have already discussed what I want so he knows what is coming - a few days notice will give them time to get you what you want.
This is a small village butcher who know that they have to give the customers what they want if they want to survive - and these guys are thriving.
Stop them and have a chat with them, show them some pics on your phone and explain what you want. It may take a few go's but it is far better training one to get what you want than being disappointed by many.
