Hi Everyone,
Working on a little venture with my butcher at the moment. I would like to know what you struggle to get and what cuts / meats you would like to see from a butcher that can deliver to your door.
To start the ball rolling I know people struggle with the following.
Pork Butt
Full Brisket on and off the bone

Decent ribs! Just can't get good ones with good quality meat on them

Another vote for US-cut ribs here! I have a great, obliging butcher but even he struggles with this for some reason!
Also rare breed pork, game, horse, and other difficult to find meats.

I would also like to get my hands on decent full racks of ribs already cut St. Louis style and 4-5 bone Jacobs ladders (a good 10" along the bone).
In fact I would like to be able to buy good rack of ribs from a butcher without having all of the belly meat on there.

One more for Tri-Tip
