Bradders well done on your purchase as the build spec is very good. As for your first cook, why not invest in a Boston butt. Simply my favourite low and slow meat to cook.
You might want to look into a temp control unit to maintain you’re cooking during long cooks. Pitmaster IQ110 is my recommendation. I think Toby has a batch that he is reselling at the moment.
