Hot smoked olive oil

Post by CyderPig »

Hi All
Anyone have any experience of smoking oils(apart from when the pan is too hot)? I read a Phill Vickery recipie for smoked herby olive oil, and fancy giving it a go.
He did a Rosemary, Garlic and Thyme version, but I am going to try Chilli, Garlic and Lime.
He mixed the herbs and oil the night before and left to steep, then smoked at low temp for two hours.

Cheers

Hi Simon,

This sounds enticing! I wouldn't mind trying something along these lines myself. Any chance you could post Vickery's original recipe?

Best

He used 500mi oil, small bunch of thyme, 6 sprigs rosemary, 1 bulb garlic roughly chopped.
Marinated overnight
Smoked for 2 hr @ 175 F or 80 C, for a lightly smoked oil.

Cheers

I take it all back re my comment of being not happy with the oil!!!!!!
Used it last night to make garlic mushrooms and it was fantastic!
The oil has improved in the bottle, a beatifull mild smoky taste enhanced with the herbs.
