My first smoke

Right then, I've done the first round of mods to my new ecb, turning legs around, drilling hole in charcoal pan and standing on concrete blocks, still waiting on the better temperature gauge but can't wait any longer! Curing the ecb as we speak, just wondering what would be the best thing to smoke first and with which wood??? Was thinking about a big sausage ring to start off with, any thoughts would be most appreciated as this is my first smoker.(need to impress the missus as she looks on it as 'R2D2 that has gone over to the dark side!!!!) :)

Boston Butt!!! Or to you guys on the other side of the pond a pork shoulder is my recommendation, fairly forgiving piece of meat as this is your first smoke with the ECB, for wood I suggest Hickory or Oak ( I just love the Hickory myself ) You could also drop a Fattie or two in at the same time for good measure. Try and get her involved, ask her opinion on the flavour (after you've checked yourself of course) but DON'T (yet) suggest she gives you a hand clearing up that will just confirm her suspicions that the Force has become a Farce ;) :lol:

Those fatties look delicious!! I've found a recipie for a maple smoked fatty with hash browns and scrambled eggs in! I feel my arteries hardening already........
