Hi there guys,
I'm new here but have a couple of smokes under my belt so far on my new babay 57cm WSM. Ribs and Chicken have previously turnved out lovely but with room for improvement and a rolled brisket (only 1.1kg) tasted great but was alittle dry in places.
So not 100% skilled yet (not by a long shot) but I have a good few friends coming round for a late seaosn BBQ and thought I'd be a bit adventurous and go for a 6lb pork butt and beef ribs. My plan is to set the cooker going about 11pm for an overnighter, no water in the pan as i've found it easier to keep the temps up to 225 deg that way, minion method and stay with it unti about 3am for the initial smoking. i'll foil when I wake up in the morning.
Based on what I've read here I should be looking at aroun 11-12 hours total cook time then into a cooler with loads of towels wrapped round them to hold the heat until 2-3pm when i'll serve, which should give me some flexibility if things overrun.
does it sound like I've got the right idea? any ideas on potential problems I'll face? little nervous about going to sleep, but i'll get over it!

I'm in Basildon and (hopefully) the meat will be coming from Masons in Billericay, just need to get up there while they're open next week to pick up the meat. Then find somewhere that does some decent lump/briquettes at this time of year too..
I shouldn't do this while I'm at work, only because it makes me all the hungrier!

I'm in Billericay, not far I used Masons, now I use Olivers in Hutton, they will do anything for you ask for Trevor if you decide to use them, You can ring them they know what a Pork Butt is, tell'em ASH with the horses sent you lol

Hi there from Hutton....
also rate Olivers as reasonable and know whats's what. I am also picking up some beef ribs this weekend from the butchers at Calcott Hall farm shop on the Ongar road just outside brentwood. Their chicken and beef is superb.
