Hi

I am in the process of setting up a BBQ catering company. Looking at the kit out there for large scale BBQing. Have you any experiences you would like to share? will be all charcoal, no gas.

I would mostly be looking to include smoked, indirect and directgrilled dishes. The direct is easy to organise as have sourced some large table top BBQ's. Can purchase large smokers, but does any one have experince of setting up smokers intime for sitting? have you come across any snags - access to venue in time, how many to use etc? Also, bbq's large enough to indirect grill with lids that are large enough to cater for lost people, which I can purchase at a reasonable price, that are also easy to get in and out of a van? Might be looking at rotisseries. Any good ones out there?

Any advice will be taken gladly!

Hi, you'll get some replies soon no doubt there are are few people on here who cater both full and part-time. Where will you be based?

Although we cater occasionally and I would be glad to answer questions your best man for this imo would be John Hargate of BBQ shack. Bare in mind he is very busy though and may take a while to answer.
