What to ask the Butcher for?

Being in merry old England getting the cuts of meat you see on the food network etc can be tricky. So where do you get your meats from and what do you ask them for?

For example I want to cook a 10lb piece of brisket but I want it to look like those lovely ones I see on american tv / google images.

Your thoughts please.

If you ask for a whole boneless brisket you should get what you're looking for.

If you're butcher is looking for instructions you can give him this.

Brisket:
This is removed from the Forequarter or the Short Forequarter. First lift the leg of mutton cut at the point end of the Brisket by cutting through the seam and hooking it back to expose the Brisket. From the point end of the sternum (breast bone) make a cut across the rib bones approximately parallel to the chine bone to include the 6th rib bone, then make a perpendicular cut between the 6th and 7th ribs separating the Brisket from the Forequarter Flank.

Whereabouts geographically are you?

You may be located near someone on the forum that has already trained a butcher in the art of BBQ Cuts.

I get my cuts from walmarts supermarket they have good meat at low prices i do not know if they are located in Great Britain.it may help to bring a picture of the brisket from your internet search over to your butcher a picture is worth a thousand words especially when dealing with butchers

We used to have a "Woolies" (part of Wal-Mart as is Asda's) but they were a general store. As you say lots of pictures here and on related topics.
