Ok, the pitmaster bit is tongue in cheek. I've got no experience of BBQ or smoking. A recent trip to Texas and the Salt Lick at Driftwood have ignited my taste buds.

You've got some wonderful suppliers locally you lucky chap. I've still some Welsh Black and llanwenog Brecon lamb in the freezer, but not much now
