injections do work and are both fun and interesting to use. my feeling is simply not to scare any novices as brisket cooking can appear to be quite daunting and it need not be. I don't follow this method at competition because of what the judges seem to want to eat.. but if I'm cooking for me or The Shack, this is what I do and my customers are usually very happy.
