Ordered baby backs, what I actually got was two racks of rough hewn spare ribs. Oh well. Not a great result to be honest. First rack were overcooked and oversmoked, second rack was much better. It was just difficult to regulate the temperature in my beat up old kettle. You can read more about it at the link in my sig.

What method did you use to cook them?

I tried to do them low and slow by indirect heat, but like I say it was difficult to keep the temperature low in my old kettle. Never mind, I think Santa might be bringing me a ProQ Excel, so I'll be giving it another go come rain, hail or snow :)

I've cooked in rain, hail and snow* and can confirm it plays havoc with the temps on my Weber OTP.


* In other words typical British weather :lol:
