Hi guys,
I bought a box of "meaty ribs" from Booker the other day, 10kg in weight and 4 slabs in a box, each one is approximately 2.5kg each give or take. I have not measured them exactly but judging but the fact that I had to work really hard to stuff them into the freezer I think they must be roughly 50cm long, 20cm wide and at least 5cm thick. How long do I smoke them for would you guess and what temperature does the smoker need to be at for this to work as they are huge and I don't want to mess it up completely.

I'd use the 3-2-1 method (3hr smoke - 2hrs in foil - 1hr back on the smoker) for these @ between 225f-250f.
