Re: Beef ribs and Pork Butt Overnighter
Hi there from Hutton....
also rate Olivers as reasonable and know whats's what. I am also picking up some beef ribs this weekend from the butchers at Calcott Hall farm shop on the Ongar road just outside brentwood. Their chicken and beef is superb.

Pork Shoulder First Effort
Second outing using my WSM. I bought a bone-in shoulder weighing around 8lb and rubbed it up yesterday, planning to start smoking at 6am this morning. I was concerned that the meat should be at room temperature so I took it out of the fridge late last night and left in a cool box in the garage - so ...

Re: smoke from charcoal

"It seems that the reason for the heavy smoke was that the briquettes somehow came into contact with damp whilst in the distribution chain, which unfortunately is beyond our control"
maybe the bags had been left on a pallet in the rain at some point?? (Wickes)
they have ...

Re: First smoke on wsm
I think you are right... when I put the coals in the temp rocketed up to about 140 degrees c, I closed the vents to throttle back. Then an hour later the temp had dropped to about 50 degrees c, and required more coals....all good fun..
