Andy,
Here's one I use from "Dad Cooks Dinner". You can reduce the sugar content an add a few drops of liquid smoke. Alternatively add a bit more chipotle. :D

Re: B&Q
All I can say is "Lucky you!" Our local B & Qs have only some inferior-build things called "Blooma". These look like Webers, but are probably sourced from China as tinny copies. No proper accessories, charcoal or wood chips, either. Waste of time going there!

Re: Chili.....Does anyone make a bowl of red?
I love this one, although I interchange the mince with chunks, depending on what's around. I also play around with the fresh chillies and the garlic, depending on who's with me.
3 dried red New Mex Chilis
2 chipotles
1 habanero
6 cloves garlic
1 tsp ground cumin
1 tsp dried oregano

Hi Simon,
This sounds enticing! I wouldn't mind trying something along these lines myself. Any chance you could post Vickery's original recipe?
Best

Yes, a tad more than I expected! Mme had a bit of a whoops moment when she picked it up (in both senses!), but then she was the one who ordered it. Normally it's me who goes OTT.

Re: It's Christmas, so what's cooking?
13lb beef rib on the bone, just roasted with a bit of "accidental" smoke (Mme Liomer wants it plain for Christmas - can't understand why!) on the Weber 22.5". Just hope the rain keeps off for a couple of hours or so.
Merry Christmas to all.
Merry Christmas to all.

Re: Cajun Bandit Stainless Steel WSM doors
Hi Steve,
Sorry it's late, but thanks - the door arrived. Looks great, and I was going to put it in place this weekend but the fates have intervened and we can't get to France where the WSM lives, so it'll have wait a few more weeks.
All the best

Re: Duck breast
How did the skin turn out?
John,
Not as crisp as when I just grill them, but not bad at all.

(ducks behind cover waiting for the abuse )
Why are the ducks behind cover, and why are they waiting for the abuse?
