Re: Subway - Pulled pork
I haven't tried subway, but Wetherspoons do a pulled pork which is very sweet and rich, can't really taste the pork either. Then, it was after a few beers and way better than a dodgy old kebab. Plus side, it includes another beer in the deal!

Re: lamb shoulder
Just about to pull some lamb from the smoker, been going since 1a.m. 222f for about 10 and a half hours ish. Used hickory. I go for a temp of 204f for pulled lamb served with fresh mint bbq sauce. Depends how done you like your lamb I suppose.

Re: Which commercial smoker?
Hi Smokin BBQ
Did you have much or a to do with EHO with the outhouse/smoke house?
It was pretty straight forward really. Got the EHO to come out before I'd started so I could tell them my plans. they were very helpful in showing me what I needed to do. Cost a small fortune to get started though ...

Hi John
The FEC120 quite quick to get to temp, about 15mins. for 222f to 250f. Mine's been left to cook over night for the last 2 years without any problems (just make sure the hopper's topped up if your having a few drinks!).
Once the doors been opened, it's back up to temp in a crack.
