Am I right in thinking only certain pans can go straight on the embers for the Dosa? Would it have to be cast iron?

His ribeye on hotstones looks like a cleaner, less crunchy/carcinagenic version of Raichlen's Jurassic Steaks. Time to find a decent rock that's not going to crack at those temperatures.

So what do you guys think of Jamie's ribs. It's something I definitely won't be trying. Also I can't help but find him extremely irritating. He needs to give his gob a rest for a bit and let the food to the talking.
