Am I right in thinking only certain pans can go straight on the embers for the Dosa? Would it have to be cast iron?

His ribeye on hotstones looks like a cleaner, less crunchy/carcinagenic version of Raichlen's Jurassic Steaks. Time to find a decent rock that's not going to crack at those temperatures.

Looks like the Grills going to be busy perfecting some of these ideas this summer!
