Well its on hope it goes well ! its a 9lb brisket first one i have ever cooked
its a big thing nearly covers my 18inch grill. thermo in and pecan wood chips on
done Big Bad Beef Rub not too heavy this a tester if it need more rub can do that next time
don't want to over do it cos kids might not like it and i do like Man V Food sandwich's
i don't think i could do a 9lb brisket on my own. Will post more pics after cook tomorrow

Looks good, what kind of rub did you go with, is the rub off the shelf or have you made it?

I'm guessing you will be smelling the first of your morning smokes. A smell which is only topped by the early morning of a competition when it is amplified by the number of cook teams. Looking forward to the pics BigM great job on keeping us posted.

Not done a brisket before - how did it go? Did the egg keep a good constant temperature?

only just got up :P

wish i had my remote thermometer anyways could not get temp to 225
over shot it at start should have closed bk sooner.
went to bed at 2 was 255f got up at 4 it was 240 got up at 6 it was 260
it didnt go out thats one thing! the Brisket was bigger than i thought
and i thought it would have shrunk more but one corner that was over gap
of heatdefector is dry the rest is fine, its at 190 so 1 more hr then going to pull it and foil
looks like dinner might be earlyer than wanted :P heheh

think i should have started with something a little shorter first than goin for a brisket
for a first go at low and slow. it aint put me off just a learning curve :)
think i got a little air leak round top airvent but a easy sort , i think this cheap ceramic's
going to be a bargin.

i just had another prob and i think its better than i thought
the bottom corner is the point going to cut that off and
chop into chunks and foil with some home made BBq sauce
and do burnt ends, the flat is so soft 1 more hr then
foiling and toweling in cooler box for 3hr so dinners at 2 :)

ok its off and in cooler 12hrs 185-190 temp start weight 9.9ib end 6.8lb
