Pork Ribs - Single ribs

Postby BRUN » 27 Aug 2014, 15:18

ive got some pork ribs, but they are not together in a rack, they are cut into singles, how would you guys suggest cooking them and would the timings change much compared to a rack ?

I usually do racks at 2 hours uncovered, 1 hour covered, and around 30 mins uncovered glazed with sauce, at about 225-250F

I'd cook them in a foil pan, smoke for an hour or two then cover with foil and a little apple juice in the pan and cook until fall of the bone tender, you can then glaze and finish over the heat

I would think they will be prone to drying out with more surface area so defo foil early I'd say.
