Depends on your smoking ability but I would go for a pork shoulder as they are very forgiving.

I've been doing ribs on the kettle and only done pulled pork once on the kettle. Got chicken and belly pork in the freezer.

the benefit of the wsm is the length of time you can smoke for off one basket - but starting small to get used to it is pretty sensible. Defrost the chicken :D

Mine came today. Got a cheap 5lbs butt from Tesco's. So going to do that with ribs. Any advice on timings would be great?

Are the ribs baby back (curved) or spare (straight) and how meaty?

On the butt go for 7.5-8.5hrs at 225f.

Not got ribs yet but they will be spare ribs. So thinking give the butt a head start 4/5 hours on the bottom rack?

For UK Style ribs, I.e. not very meaty , remember to reduce your timings from the US standard of 3-2-1 to maybe 2-1·5-·5 or something of that order. You now face the dilemma of foiling or not. Personally I would always foil with a couple of spoons of liquid of choice.

Managed to get meaty ribs :D
Got one rack from Tescos meat counter and one from a local butcher.
Tescos £10
Butcher £15
One butcher said they would not cut the ribs meaty because of to much waste :( offered me to buy the whole belly about £20.
