advice on temp gauge please

Getting very close to finishing probably the longest offset bbq smoker build ever :| . I would love some advice on the best method monitoring the temperature in the oven, wanted to fit the round dial ones, but people on here seem to find them very inaccurate

There are some very accurate American gauges, but as to be expected they are very expensive, they are only ever a guide but once you are aware of how far they are out (usually tested with boiling water) they are quite useful.
As to seals, from what I've read a lot of people use fire-rope as a seal, if the gaps are not too big heatproof silicon could be used.

There is some advice on there regarding sealing the doors etc.

As Keith said silicon or fire rope will work well too. I am using a oven door seal as mine is different to most of the other offsets as my top doesn't sit on the bottom it over laps.
