Tesco Pork Shoulder

Postby Chris__M » 13 Jul 2012, 00:47

Up until recently, the only pork shoulder my local Tescos stocked (both the local supermarket, and the Peterborough big big store) was boned and rolled.

I noticed the other day they are now selling bone-in pork shoulder. Not huge - approx 1.8 - 2.2kg - but I bought a couple, and cooked them today. They pulled really easy, and are now sauced and sitting in my fridge until Saturday, when I will have a crowd around. At about 6-8 quid a shoulder, these seem cheap enough, and by my sampling are plenty tasty.

However, not cut like the boston butts I've seen. I actually thought they might be picnic, by the triangular shape, but after cooking I found both of them had a blade bone in them.

They produced a large amount of pulled pork. I hope we eat it all, as currently my freezer is playing up, and looks like it might need replacing.

Was it skin on or skin off?

Several years ago they used to sell boned rolled shoulder with no skin no bones. It had a nice bit of fat marbled through it and was ideal for making sausage. They don't seem to sell that any more :-(\

Chris nail well and truly hit on the head, they would be known to your butcher as a pork blade roast (with or without the word bone). Nice crackling from them as well if roasted ;)

Skin on, with a good layer of fat. I left it on, and cooked it skin side down. Skin came off in one piece when it was time to pull.

Over the last 6 months I've found the quality of Tesco's pork has improved and there are always offers to be had too which makes it even more appealing, if only the same could be said for their brisket!
