Personally I use a Kenwood mixer with the meat grinder and sausage stuffing system which works really well, also if you're getting your meat from your butcher don't bother buying hog casings online, tell him what you're doing and ask if you can get some from him. My butcher does this for me and they keep for months if you store them in your fridge in salt water.
Sorry I got mine from TCM in the good old days, agree with getting your casings from your butcher, some are wet stored, some dry but all need rinsing. Used to have a Kenwood with mincer attachment and can confirm the are the bendy bits on a bee's leg .
