Hi guys,
Does anyone smoke the cheap beef joints from the supermarkets?
The ones that don't mention what cut it actually is...
If so, is there anything special with cooking it to a nice juicy tender sliced roast?

I haven't smoked beef but I've done a lot of boneless pork shoulders from lidl. The ones I get are usually around 3-4lb in weight. I take the skin off and refit the string/elastic and smoke them. They come out pretty tasty, I prefer sliced to pulled so usually go to 88-90 internal temp.

I've done a cheapo small brisket. Don't smoke too long so it dries and then foil.
Depends on fat and connective tissue though really. Chances are beef will be leaner.
I find you tend to get what you pay for with meat but beef especially.

I smoke the Tesco Everyday Value bone in pork shoulder... I'm quite sure that a butchers joint from an organic pig would be far superior, but until I get my techniques right and am confident that I could do a quality lump of meat justice, I'm sticking to the cheapo cuts. They taste great, are nice and moist and the family loves them!

To be honest pork joints are much more forgiving and normally very fatty naturally. Shoulders obviously not tenderloin etc.
Beef is a bit different, especially brisket. I've had cheapo beef and it has been quite dry for most of it but with the odd super rich juicy bit where there was a pocket of fat.

Does injecting help at all with our lean UK briskets?

I always inject beef. Nothing fancy just broth. I like Knorr pots.

Gonna buy a cheap ass joint from Lidl tomorrow and some beef stock - probably Knorr.
Do you inject it warm or let it cool before injecting?
I won't be smoking anything until the weekend so plenty of time to plan.
I'll probably buy 2 joints, inject both with just broth and then cook 1 to 190F and the other to 200F - I will probably check around 180 on the tenderness of the joints with an instant read too.

One of the best places to buy meat is tomhixon - wholesale butcher. Very reasonable prices, and they deliver.
The Australian Grain fed rump is particularly good.

I do like the pork shoulder from tomhixsons but delivery charges are what stops me ordering. Under £100 has a £15 delivery charge.
