Hey guys, did a big cook out for around 20 of my friends last sunday and was quite proud of myself.
Got home from a party saturday night at 2:30 and figured I should make a start for my 5pm serving time haha.
My first day cook using both my offset and my new weber one touch. neck end shoulder of pork (13hrs) and medium brisket (10hrs) in the offset and 4 racks of baby backs (4hrs) and 12 cupcake chicken thighs (spread between the bbqs for around 2 hours).
Once all the slow and low was done I foiled them all tight and put them in a cool bag to rest while I stuck a chimney of coals on my one touch and grilled my 12 home made burgers (and some veggie burgers). All ready in perfect time and probably my best pulled pork yet (thanks to the longer wrapped time in the smoker with apple juice). By 6 in the evening I was shattered but proud and all was served with both my home made bbq sauce and jack daniels glaze (good TGI style recipe).
In total I think it was around 25lb of meat after I butchered it all.
This was the first time I used my restaurant grade charcoal (big K) and I loved it, a great burner thats easy to light and would recommend to anyone that hasnt tried it yet, paired with my apple wood worked a treat.
Anyway, just thought I'd share my little story and maybe give hope to those just starting out slow cooking because I only started in april and I'm finally getting pretty happy with my results after much practice and experiment.
