I'll get this in the Planner for sure.

I quite like their shows, easy to watch but still containing snippets of good insight.

Si caused absolute havoc on the Best of British segment on picnics when he suggested all you need for a good picnic is some bread and good quality oils.

Did you see the recent BBQ episode and their attempt at ribs? It was so wrong (IMO)I almost threw my plate at the TV.

- They presented what they called babyback ribs when it was a full un-trimmed slab.
- Left the membrane on (personal preference). They did not even discuss pros and cons.
- Smothered it in spices.
- Put the rack on a baking tray with water and sealed with a foil cover to steam.
- Then applied a smothering of 'liquid rub'?
- Put it on a bbq grill, closed the lid and left it on there for a few hours.
- When they finished it was falling apart everywhere. Way way way overdone IMO and I doubt a hint of smoke.

I just expected a lot more from them considering they visited the experts and sampled the real goods over there. They just came across a blaggers.

I suppose it's geared towards those people who don't own smokers - but they should have at least raised the topic. :)

Have to agree with everything you said. As for seasoning the ribs with (IMHO) large quantities of salt haven't I read on the best UK BBQ forum numerous cautions about leaving salty rubs on pork for too long????????

Who said BBQ & Ribs are rock and roll food anyway? :P
If that were the case Wimpeys would be a BBQ joint, and what's with the leather waistcoats all the time? They aren't "Angels"nor aspire to being such. At least they wear good Tee-shirts (Skynyrd).

I note there is no intention to flog a book with this series

I've just watched the recording I had of the hairy bikers in Memphis and the rib cooking method wasn't correct but I'm sure they were better than most you can buy in the UK.

I've got to say though that they know what they're doing now as Dave Myers called me around 5 months ago and bought a GMG Jim Bowie from us. I also spoke to him a around a month ago and he loves it and is going to feature it in a future BBC 2 program!

Don't forget that they do TV program's that are broadcast to the masses so they usually alter recipes so your average guy at home can cook it without needing a £1000 grill!

Also, regardless of their apparant spontinaity, it's a scripted program otherwise the outakes section on the DVD & website would be quite boring.
My main concern with them is they seem to be trying to form a new comedy partnership rather then a cooking duo. As to the Crawfish boil................no thanks, when last I heard all creatures have a fight or flight reaction to "drop excess body weight" when threatened and a pan of scores of Crayfish being slowly brought to temperature would surely induce that reaction :o :shock: :mrgreen:
