As a fan of oriental style knives (15 degree blade as oppposed to 20 on european knives), the best value
I have come across are I.O.Shen. I have noticed more and more professional chef use them as well.
Their customer service is also superb, I chipped a knife in a house move and they reground it and shipped it back
to me in perfect condition for £7.50.
I would suggest a pairing knife, a large chef's knife and chopper would be a good start for BBQ knive selection.
Also learning how to sharpen a knife is essential - I cheated and bought an electric sharpener.
Quite like the idea of some large butcher style sabre knives next, to add to the 40 or so knives I have.........
