Looks good! I'd have someth ing. Only thing I would say is ve careful of using the word free. There is always some muppet that will come in and ask for them for free!
Don't use free when you mean optional. ;)

I'd ditch the '11 hour smoked' thing though, it's not reeeeeeally seen 11 hours, has it? ;)

Umm yeah. I put the shoulders on the smoker and take them off 11 hours later. It burns wood pellets for those 11 hours. I don't foil or crutch them. Just leave them to it.

How did the first day go?

And what are your plans for expanding the menu?
Maybe some short rib perhaps? Perhaps my most favourite cut of meat to smoke, and most ordinary folks have no idea what it is.

You're living the dream as far as I'm concerned.

First day was pretty crazy. Lots of problems that only ever appear on a first day. One of the fryers packed up and the other now seems to be running about 40°lower than it should. Still don't have an oven or hob or grill
Place was busy with lots of friends stopping by. Quieter today. The locals still seem a little unsure of this type of food, but the pulled pork nachos are selling well so that might be a good starting point for them. I'm quite prepared for it to start very slowly. The place had been badly run for a while and people who don't like Aftershock and whiskey cocktails at 11am were giving it a wide berth.
As for the menu I'll probably trim it a bit further. Slowly build a reputation for doing a few items really well and hopefully customers will come with it. I'd love to be able to just sell bbq food and add all my favourites but at the minute it just wouldn't work.
