Good butcher needed Warrington Area

Yo Dudes,
I visited my butchers last week to buy some ribs. Firstly, he didn't seem to understand when I asked for Loin back ribs which didn't fill me with confidence. He eventually offered me some spare ribs, which he called just 'Pork Ribs'. He asked did I want anything doing with them to which I requested the membrane be removed. He just looked at the ribs and told me they looked OK. I wasn't 100% sure as this was my first purchase of a full rack.

I got them home and it became obvious the membrane was still on there. I have now come to the conclusion that he's cr@p so I'm looking for a new butcher. Does anyone know near or around the Warrington area that knows his stuff?

Chris, have you thought you might be the very first person to ask for ribs? It may not be that he's bad just has never been asked before. If you read the posts on the forum you'll note that the majority of us have had to educate our butchers as nothing we ask for in the way of US BBQ is a traditional British cut of meat.
You describe him as your butcher so presumably you've used him before for more traditional fare, stick with it and show him some proper pictures and he'll soon get the idea.

Can't disagree with that aris, of the 6 or so at my local who "work" there there is only 1 I'd call a proper butcher. There is one old guy who seems to have lived most of his life as a "shop-boy".

Usually I would agree , but the "theyare fine" response to the membrane Q suggests a lack of interest to me.

I am lucky in that my local butcher doesnt understand the american parlance, but wants to get me what I want. Great example was the other week when I asked for a dozen chicken wings, sorry he said it will be a few minutes.....he then appeared with 6 chickens and de-winged them for me, all for £3.

I would suggest ;looking for someone similar who is up for it,

Find yourself a halal butcher. They sell wings by the ton - they can even skin them for you if you like.

No pork butts though

Not from wigan but close enough to visit. I'll give England's a go.

I got plane ribs from Morrisons tonight, I had some last weekend and they was ok. Tonight it looked like the butcher ( they have an inhouse one in leyland) had taken a full
Rib cage and chopped it up, they where loin, spare and some that looked maybe right from the
Front bought 5 packs of different ones to try.

Anybody in the north west should make a pilgrimage to Cranstons in Penrith, one of the best Butchers I've come across anywhere in the world and purveyors of the finest English sausage that I have ever smoked. They do courier delivery within the UK
