Greetings from Epping

I have a gas grill for yonks and have been incinerating sausages and chicken legs for yonks as well.
I've been cold smoking for a while but got interested in hot smoking from watching the Pitmasters TV programs. Food looks excellent, if you can stand the shouting. So I decided to get a WSM last year and it's the business.
