Hello, Gary from Birmingham

Hi Everyone
I'm completely new to smoking, although I used to be a chef, so I know a little about food saftey etc. I'm mainly interested in cold smoking, my ultimate goal will be trying cured, smoked bacon and hams. At the moment I'm collecting bits and bobs to make my own smoker along with reading some great posts.
