First Kamado grill recipe advice.

So all being well we pick up the beast tomorrow and I want to get a flame in it straight away. :D

What would you advise as a great dish to christen the grill with? What was your first dish??

Beer can chicken is a good first dish once you have mastered temperature control.

Hot smoked salmon.
Start with a salmon steak on a piece of foil, heat deflector stone in and hardwood chips on the coals. Give it 45 mins at 120C and enjoy.
There's a load more that you can do to add flavour but this is simple, it works and you'll get to understand immediately why buying a kamado was a good investment.
