Wings and Skirt Steak! Pic Heavy

Today was a perfect day to use the Weber Kettle, so I got some chicken wings and skirt steak.

Rubbed the Wings in some Plowboys Yardbird and threw them on the Kettle with a chunk of cherry for smoke:

Flipped them part way through:

Once they were pretty much done, i threw them directly over the coals to give them a char:

Plated in some BBQ sauce as that's how the rest of the family likes them:

Now On the the skirt steak, firstly I made some Chimichurri, cant beat this on some grilled steak:

Looks lovely - particularly the skirt. I've never cooked with skirt at all - I remember the stringy old rags we used to have for midweek tea when I was a youngster; how does it turn out on the barbecue? What's the texture like? Also, how long was it on for?

Sorry - so many questions! But it looks very appealing :D

That's some nice looking food there. Got ours out for the first time this year, it was nice but not as good as that!

Its very good on the BBQ. The key to cooking skirt like a steak is the cook it quickly, don't cook it more than medium, if possible cook it medium rare and always cut across the grain and cut the pieces thin . If you cut the piece of meat along the grain it will be stringy and chewy.

If cooked right the skirt is as good as any other piece of steak. It was on for around 7-10 minutes if i had to guess, I didn't really time it i just kept checking the temperature with my Thermapen and took it off when it was done. This was cooked directly over the coal for the whole cook as well.

I just got some Plowboys Yardbird rub, I'm gonna try the wings as yours look great! I will also try the skirt steak with Chimichurri sauce (just googled a recipe). Thanks for sharing :)

I did the whole chicken wings with the yardbird rub, they were really nice. Some of them I heated some Frank's hot sauce with some butter and made them into hot wings. Everyone loved them. definately on the "the list" along side my pulled pork & baby back ribs with Sweet Baby Ray's Honey BBQ sauce.

I've still the steak to try....
