Ox cheek

Hi all,
Anyone ever done an ox cheek before. It's fairly small so I'm guessing not a massively long cook time. 6 hrs at 107 to fall apart?

Yes - I went 109 for 6 hours - my notes say "try wrapping after 2 hours next time"

Hi,
Did consider this for the weekend but in the butchers it was something like 3 and a half quid for an ox cheek that would have struggled to feed 2 people. reckon it is another victim of the cheap cuts gone trendy disaster, welcome other folks thoughts on price of ox cheeks.

Mine was 3.25 I think. Something ridiculous like 6.50 per kilo. If I was doing a lot of them I'd shop around but for a tester I went for easy. As aris said, no such thing as cheap anymore. What on earth has happened to meat prices ?

Thanks JBBQ, thought that should be enough. Im just gonna do it in the oven or maybe a stockpot with a mirepoix to test it out for flavour and texture. How did yours cook up. Bit dry I'm guessing if you needed to foil earlier? Or was that to cook quicker?

Yes mine ended up a little dry hence foil next time

I've just had a look at online butchers for ox cheek - £9.40/kg, £7.50/kg, £18.13/kg (seriously), £11/kg, £14/kg....
I'd love to try them, but those prices are just ridiculous

Once a poor mans cut, xx cheek is very trendy now- particularly with the advent of sous vide. You can blame Heston Blumenthal for these prices

I'm going to inquire with my local butcher as they tend to be pretty reasonable and they like me, so I may be able to get a deal on 'em

If I can get them for less than £7/kg I'll give 'em a go
